Kielbasa & Pineapple Skewers

Literally 22 minutes to write this post.

Been a crazy week. My girls graduated Kindergarten, finishing an article for Jersey Bites and we are hosting a neighborhood pizza party this weekend.

So I'm short on time.

In truth, this recipe isn't even mine. It's my mother's. But becasue she's my Mom, I'll take credit for writing it up but naturally give her a shoutout. :) I love you Mom, you're one of about 15 people who read this blog and without a doubt one of my biggest fans!

Aahhhh, down to 18 minutes before I have to scadattle to get ready for family dinner out to celebrate the big graduation. Poached Pear, here we come!

This recipe, so easy and delicious. It has that sweet and salty thing going for it and that's a hit among almost everyone. You can assemble ahead of time and just grill it when your company is ready. The char is key, you really have to get those grates hot!

We serve it with a spicy mustard and have been loving this appetizer for quite some time.

Speaking of time, I have nearly zero of it left now.

Bye guys, enjoy the recipe.....

Kielbasa & Pineapple Skewers

Serves: 6-8

Ingredients:

1 package kielbasa, cut up into 3/4 in rounds

1, 20 oz, can of pineapple chunks

spicy brown mustard, optional but encouraged

  1. Assemble your skewers- stack about 4 kielbasa and 4 pineapple chunks alternating along each skewer.

  2. Heat grill over medium flame.

  3. Place skewers on grill. Grill each side about 4-6 minutes until grill marks are evident and slight charring has occurred. Turn and repeat on all sides.

  4. Plate with a dipping bowl filled with spicy brown mustard.
