Double-Dredged Air Fried Asparagus



Confession time.

I don’t really like asparagus.

Broccoli, string beans, peas, zucchini- 100%, yes I love those greenies!

But asparagus, no.

Hubby loves them though and I know they’re good for me.

So I eat them.

Doube-dredged and fried though.

And guess what? I love them! ;)

With a fresh squeeze of lemon and some extra salt atop, they really are delish. Perfect for an appetizer or maybe even to get your kids to eat them.

Or wife, I suppose too.

Double-Dredged Air Fried Asparagus

Servings: 2-4 as an appetizer


Ingredients:

1 bunch asparagus, rinsed and trimmed

2 eggs, beaten

1.5 C Italian Style Breadcrumbs

3 TBS grated Parmesan cheese

Olive Oil Spray

Kosher salt, to taste

1 lemon, quartered

  1. Place the eggs in a shallow bowl. In another shallow bowl, mix the breadcrumbs and Parmesan cheese

  2. Working 2 at a time, dip and coat the asparagus into the egg mixture then into the breadcrumb mixture. Then, dip those same 2 into the egg and then into the breadcrumb mixture again. Set aside and continue with the remaining asparagus

  3. Preheat air fryer to 400 F or your highest setting

  4. Place half of breaded asparagus into air fryer, spray them equally with oil spray and fry for about 4 minutes, then flip, spray and fry the other side for about 3-4 minutes or until deep golden

  5. Remove from air fryer and repeat with the other batch

  6. Liberally sprinkle salt atop and a good squeeze of lemon

  7. Optional- you can also leave out the lemon and sprinkle extra grated Parmesan atop and a drizzle of balsamic glaze!
