Air-Fried Sausage & Broccoli Rabe Ravioli

Back from Disney friends. It was magical. I'll spare you the Mickey & Minnie details but let's just say it was a trip we will always remember.

Let's also just say one shouldn't plan a birthday party the weekend returning from a long trip! Yup, that advice is directed to this momma. Baby boy turning 5 (tear drop) and amidst doing the vacation laundry, putting away all the memorabilia and getting back into a school routine, I'm organizing for a big ol' fiesta! What was I thinking?

So this week's menu is easy, quick, and with minimal ingredients. Naturally, delicious too. And since I love me a midweek appetizer pick-me-up, I made this gems. Yes, I can make time for Wednesday appetizers but no, I haven't gone through the mail yet. Guilty as charged.

But so easy! And air-fried! I think the key here is one, using good quality fresh ravioli and two, spraying with olive oil before cooking. I live near Dearborn Market in Holmdel, NJ and they make some bangin' fresh ravs! The sausage & broccoli rabe ones are our favorite, so I decided to use them with this recipe. If you are in this area, you must go! But if the name of that market has you scratching your head, you may want to check out a nearby Shoprite if you're in Central NJ, some Shoprites carry their products. And if your in, say, Wisconsin, well, that's pretty cool but my only advice would be to use Rana brand. Those I've had good luck with.

But anyway, these would make a great party platter or just a pre-dinner treat on a stay-at-home date night. I know you're sick of those post 2020, but really- yoga pants, a cozy sweatshirt and fried ravioli on a Friday night......hard to resist.

I will for sure be making these all Holiday season. The artichoke ravioli had my eye too for further investigation, ;) So let me know if you tried these and how they came out. Whether your midweek crazed or feet up on a Friday, I'm guessing they'll be a treat well deserved.

Enjoy......

Air-Fried Sausage & Broccoli Rabe Ravioli

Servings: 2-3 appetizer portions

Ingredients:

1, 6oz., package fresh ravioli, sausage & broccoli rabe filled (you can really purchase any filling you like though) If you're in NJ, I highly recommend Dearborn Market's , available in store and at some Shoprite locations!

1 egg

2 TBS milk

3/4 C breadcrumbs, Italian style

Olive oil spray, I recommend Trader Joe's

Marinara sauce, for dipping

Kosher salt, for garnish and extra flavor

*special equipment: air fryer*

  1. In a shallow bowl, whisk egg and milk. In another shallow bowl, add breadcrumbs.

  2. Working with one ravioli at a time, drench in egg wash then coat heavily on all sides, with breadcrumbs. Place on a separate plate. Repeat with remaining ravioli

  3. Preheat air fryer to 400 F for 5 minutes.

  4. Spray tops of ravioli with olive oil spray, turn over and spray other side.

  5. Place all ravioli on shelf in air fryer. Cook for 5-6 minutes.

  6. Remove from air fryer, sprinkle with salt (and grated cheese if you'd like!) and serve with hot marinara.

  7. Enjoy!
